As lakes are constantly changing, so to are the neutron, proton and electron. Even though a lake may stay at relatively constant level, water is flowing into and out of the lake. Water in the form of springs, rain streams, snow, sewage etc. and out as evaporation, streams, ground flow, and tap water. The neutron, proton and electron receive particles, photons, etc. in and then emit them back out.
The question is what makes stable particles stable. more or less constant.
The universe is in change.
